Takay, the highly-anticipated, new 10 seat omakase counter from founding partners Glen Kotlyarski and Yoni Matz, officially opens July 10 on Coral Way in Miami.

Rooted in the traditions of Edomae sushi, Takay (“tuh-KAI”) takes a quality-first approach centered on pristine seafood flown in from Japan, seasonal produce from local farms and an intimate chef-led omakase.

Chef Glen Kotlyarski leads the culinary program, bringing more than two decades of experience from acclaimed Japanese restaurants, including Miami’s Michelin-starred Hiden. Alongside founding partner Yoni Matz, the pair has created a hospitality-driven concept where precision and personal connection are at the heart of every seating.

Adapted from the Japanese word takai, meaning “high” or “elevated,” the restaurant reflects that philosophy through every detail, from ingredient sourcing to execution.

Designed by Japan-based firm KTX, the intimate 800-square-foot space blends traditional Japanese craftsmanship with subtle Miami influences. Guests enter through a tranquil Zen garden before taking their seats beneath a striking hinoki wood installation inspired by Hokusai’s The Great Wave off Kanagawa, creating a setting that is as thoughtful as the menu itself.

Takay will be open Wednesday through Sunday with two nightly seatings at 6 and 9 p.m. It will debut with a 17-course omakase experience priced at $250 per person, with plans to introduce additional omakase offerings in the coming months.
