Michelin selected Moody Tongue Sushi at Hilton West Palm Beach on Oct.9 will launch a new 13 course omakase menu and beer pairing. The fall-inspired menu is priced at $185 with a curated beer pairing for an additional $75, offered Thursday through Saturday evenings at 6:00, 7:30 and 8:30 PM. Moody Tongue Sushi will also offer an eight-course omakase dinner during a 5 PM seating priced at $95, with a beer pairing for $45.
The new menu will include a Hokkaido Scallop Hand Roll with wasabi, corn, potato skin, and bacon fat, paired with the Allstar Peach Wild Ale. This specialty lambic-style ale has hints of Chardonnay, and the Allstar peaches are sourced from Mick Klug Farm in St. Joseph, MI., according to Moody Tongue Brewmaster and Co-Founder Jared Rouben.
Other new menu items include Hamachi with miso mole sauce, sesame seeds, and micro cilantro, paired with a Cherry Oud Bruin, featuring Balaton cherries from the same Michigan farmer.
“This beer was created for the Pinot Noir fans,” Rouben said.
The omakase menu concludes with Tiramisu with mascarpone, matcha, and cocoa, paired with the 2022 vintage of the brewery’s Bourbon Barrel Aged Gingerbread Imperial Stout.
“This dessert and beer pairing might be my favorite, featuring notes of gingerbread cookies dipped in Bourbon chocolate espresso,” Rouben said.
In addition to the West Palm Beach location, Moody Tongue currently operates four world-class dining concepts, with two in Chicago and two in New York City. In 2021, 2022, 2023 and 2024, Moody Tongue’s Chicago location has been awarded stars in the Chicago Michelin Guide.
