Born in Mexico and raised in the American Southwest, Chef Saul Ortiz brings more than 25 years of culinary experience and a deep passion for Mexican cuisine to his role as Chef de Cuisine at Lona Cocina & Tequileria at the Westin Fort Lauderdale Beach Resort. His cooking is rooted in the traditions of his homeland while reflecting decades of experience working across some of the country’s most dynamic culinary destinations.

Chef Ortiz began his culinary career in Reno, NV., before relocating to Las Vegas, where he spent years honing his craft in high-volume, world-class kitchens. Over the course of his career, he has held leadership roles with major hospitality groups including MGM Resorts International and the Hard Rock Hotel & Casino, where he helped develop large-scale food concepts and oversee complex culinary operations. He also trained with the acclaimed Richard Sandoval Hospitality group, further deepening his expertise in modern Mexican cuisine while working in culinary hubs such as Denver, New York City, and Las Vegas.

Prior to joining Lona, Chef Ortiz served as Executive Chef at Thunder Valley Casino Resort, near Sacramento, CA., where he oversaw multi-outlet culinary operations generating tens of millions in annual food sales and managed large teams across multiple dining concepts. Known for his strong leadership style, operational expertise, and creative menu development, he has built a reputation for delivering bold flavors while maintaining rigorous standards for quality, efficiency, and food safety.

At Lona Cocina & Tequileria, Chef Ortiz brings his signature approach to modern Mexican cuisine, combining traditional techniques and authentic flavors with global influences. His menus celebrate the vibrant ingredients and culinary heritage of Mexico while embracing the creativity and energy of South Florida’s dining scene. He is excited to interpret Chef Pablo Salas’ cuisine while adding his own stamp.

Chef Ortiz has also appeared on several culinary television programs, including Taco WarsCocinando Juntos, and Season 3 of Chopped, on the Food Network.
