Neapolitan pizza is coming to the Texas Hill Country as the centerpiece of a million-dollar enhancement project at JW Marriott San Antonio Hill Country Resort & Spa, which is currently underway. The resort is expanding its culinary offerings with the addition of FIAMME Pizzeria, which will offer an elevated pizza experience. Scheduled to open tis summer, FIAMME, which means “flames” in Italian, will serve Neapolitan pizza and accompaniments, such as appetizers, salads, desserts, unique cocktails, and the resort’s signature Hill Country Honey Blonde Beer.
FIAMME (pronounced fi-amme) Pizzeria will be on the lower lobby level adjacent to the resort’s main dining restaurant, Cibolo Moon. This new venue will offer guests the opportunity to take their meal and dine al fresco among the resort’s multitude of outdoor areas. There will be seating inside the restaurant for approximately 25 people.

Neapolitan pizza is a style of pizza created in Naples, Italy and is traditionally made with simple, fresh ingredients and baked at 900 degrees for up to two minutes creating a light, fluffy crust with a crispy outside layer. FIAMME Pizzeria will feature a Morello Forni dome mosaic pizza oven that has been imported from Italy. The pizza oven is seven feet in diameter ,with seven-inch-thick walls, weighing over 7,000 pounds. An electric rotating pizza stone will be featured in the center of the oven, allowing for the most consistent and authentic product.

FIAMME Pizzeria will join the seven existing dining outlets, which include Cibolo Moon, serving creative Mexican cuisine among a diverse tequila selection; 18 Oaks, the resort’s upscale fine dining steakhouse; High Velocity, the expansive sports bar and restaurant with a 120-foot-long HD video wall and a Topgolf Swing Suite; Crooked Branch, the acclaimed lobby bar and restaurant serving Asian inspired tapas dishes with a Texas twist; Rivertop Grill, an outdoor restaurant within River Bluff Water Experience; Replenish Spa Bistro, a relaxed restaurant with health-conscious dishes within Lantana Spa; a food trailer, Nourish; and an on-site Starbucks.
