Tropical Smokehouse owners Jason Lakow and Pitmaster/Chef Rick Mace later this summer will open another West Palm Beach location. Called Tropical BBQ Market, the new location Olive Ave., will be a highlight of the summer culinary season in Palm Beach County.
Here’a a look what’s happening this summer in Palm Beach County beginning with Mace’s take on brisket, currently served at Tropical Smokehouse in West Palm Beach, an soon at Tropical BBQ Market.
Tropical Smokehouse (West Palm Beach)
Mace, of one South Florida’s top chefs, didn’t even offer brisket when Tropical Smokehouse first opened on South Dixie Highway on the edge of West Palm’s Restaurant Row.
“We aren’t in Texas,’’ he told customers.
The demand for brisket, however, made Mace change his mind. Now he serves what might be the best brisket in South Florida – lightly seasoned and slow smoked for 10 to 12 hours with hickory and oak woods.
“This year we upgraded the kind if brisket we are using,’’ said Mace, former executive chef an Daniel Boulud’s Cafe Boulud in Palm Beach. “We buying it from a smaller operation and paying a lot more money, but the brisket is significantly better.’’
