The third part of a four-part project will come to life next month when Studio District Group partners Nick Scalisi and Chris Muneio open The Steak Shop by Rancher’s Reserve in the Flamingo Park neighborhood of West Palm Beach. The 1,300 square-foot property will showcase the Florida-grown Akaushi Wagyu beef from Scalisi and Muneio’s Rancher’s Reserve farm, as well as beef and pork from other local, small ranches.

“It will be more of a butcher shop, but with sandwiches and burgers and wagyu bratwurst – sort of an evolving menu based on what’s available at the farm,’’ Scalisi said.

Look for The Steak Shop to also occasionally feature some unique meats. For example, Scalisi said the shop will have cuts of beef from Piendmontes cattle. Originally from northwest Italy, but now grown in a few places in the U.S., Piedmontese cattle produce what generally is considered lean, flavorful and tender enough to cut with only a fork.

“Probably something a lot of people have never heard about,’’ Scalisi said.

Rancher’s Reserve cuts of Akaushi wagyu beef and Berkshre pork are staples of Fern (formerly Fern Street Wine Bar & Kitchen) near downtown West Palm Beach. Scalisi and Muneio opened Fern on the street of the same name) in 2019. The farm to table eatery (don’t pass on what might be the best charcuterie plate in South Florida) quickly established itself as one of Palm Beach County’s top restaurants. It’s grown more popular the past year as the area around Fern has grown with more restaurants, valet parking options and less street construction. 

That popularity – and visibility – should grow even more with Fern’s new craft cocktail menu (Happy Hour daily from 4 pm to 7 pm) to go along with dishes such as a Wagyu Short Rib with Japanese Sweet Potato; and a Smoked Wagyu Tri-tip with Burrata and charcoal-roasted tomato.

Part Four? Rueshaw Steakhouse next to the Steak Shop in Flamingo Park, which Scalisi said currently is one year away from opening.
