Moody Tongue Sushi at Hilton West Palm Beach and Palm Beach Meats, are collaborating to create a 10-course Wagyu tasting menu and specially curated beer pairing in celebration of Father’s Day weekend. Moody Tongue Sushi was awarded a 2025 MICHELIN Selection and Palm Beach Meats was awarded a 2025 MICHELIN Bib Gourmand. Moody Tongue’s Chicago flagship location is currently the only brewery in the world to hold a MICHELIN Star.
Moody Tongue co-founder and brewmaster Jared Rouben worked closely with Palm Beach Meats co-founder Eric San Pedro to create the tasting menu, complemented with a selection of Moody Tongue beers. The tasting menu will be available at Moody Tongue Sushi from Wednesday, June 11 through Saturday, June 14 at $225 per guest, with the beer pairing available as a $55 supplement. Moody Tongue is closed on Sundays.
“This Wagyu and beer pairing dinner will create an unforgettable Father’s Day experience and we are so honored and excited to collaborate with Palm Beach Meats,” said Rouben. “From the highly prized Bushu Wagyu to our specialty beers, we are looking forward to sharing this one-of-a-kind experience with our guests.”
The Father’s Day 10-course menu will include tastings of Wagyu Spicy Daikon Ponzu; Torched Wagyu Nigiri with Sea Salt & Lemon; Torched Wagyu Nigiri with Soy Sauce & Fresh Wasabi; Diced Torched Wagyu Gunkan with Chili Crisps, Quail Egg Yolk & Scallions; Torched Wagyu Nigiri with Shio Koji; Shabu Shabu Torched Wagyu with Mizuna Salad, Sesame Dressing; Torched Wagyu Nigiri with Spicy Sesame Miso, Sesame Seeds, and Chives; Torched Wagyu Nigiri, with Wafu Chumichuri, and Micro Cilantro; and Hokkaido Uni and Wagyu Handroll. The menu is completed with a special dessert.
Beer pairings include Toasted Rice Lager, Sudachi Lager, Pressed Asian Pear Saison, Framboise, Cassis, Cherry Oud Bruin, and Bourbon Barrel Aged 12 Layer Cake Imperial Stout.
San Pedro is one of three licensed importers in the nation authorized to bring the ultra-rare Bushu Wagyu to the U.S. from the Saitama Prefecture in Japan. Recognized for its rich, buttery flavor and high degree of marbling, the beef is raised by the Hasegawa family on their fourth-generation farm where the cattle are fed a unique diet, partially comprised – and uniquely fitting – with ingredients from the beer fermentation process.
In addition to the West Palm Beach location, Moody Tongue currently operates four world-class dining concepts, with two in Chicago and two in New York City. In 2021, 2022, 2023 and 2024, Moody Tongue’s Chicago location has been awarded stars in the Chicago MICHELIN Guide.
