Moody Tongue Sushi West Palm Beach was awarded a MICHELIN Selection at an April 17 in Orlando where the additions to the 2025 Florida MICHELIN Guide were announced. Moody Tongue Sushi opened at the Hilton West Palm Beach this past January as the latter’s first permanent Florida location.
Moody Tongue Brewmaster Jared Rouben and Executive Sushi Chef Hiromi Iwakiri each were present at the ceremony to receive the award. It’s the third MICHELIN accolade in the Moody Tongue restaurant group, as its Chicago flagship location is currently the only brewery in the world to hold a MICHELIN Star. Moody Tongue Sushi’s locations in both New York City and West Palm Beach each hold the ‘Selection’ designation.
“The community has so graciously welcomed us since our first installation on the island in 2023,” said Rouben. “We are grateful for the success of Moody Tongue and hope to maintain that momentum as we continue to grow.”

The restaurant features a 13-course omakase experience celebrating Moody Tongue’s passion for exploring hyper-seasonal ingredients, presented with its renowned multi-course curated beer pairing. Found within the newly renovated Hilton West Palm Beach, the intimate space highlights a traditional 14-seat omakase counter and luxe banquette seating.
Guests can receive specialty pairings, such as Hokkaido Sea Scallop with edamame and Ossetra caviar, with a Pressed Asian Pear Saison; Madai, served with Florida Orange zest and sea salt, with an Orange Blossom Belgian Blonde; and a decadent Florida Stone Crab Hand Roll, adorned with charred pineapple and sauce dijonnaise, beautifully paired with a Cherry Oud Bruin.

Utilizing his extensive culinary background and brewing education, Rouben approaches brewing with a chef’s mindset, carefully creating balanced beers that showcase layers of flavors and aromatics. The experience showcases a curated selection of artisanal beer pairings, including specialties such as a Grapefruit Gose, a lightly tart German-style wheat beer incorporating Florida Ruby Red Grapefruit, and a Yuzu Lager, blended with fresh yuzu juice, as well as perennial favorites like the brewery’s Juiced Lychee IPA. The restaurant also offers a curated selection of Japanese whiskeys as well as wines and sake.
Rouben has also created a celebratory West Palm Beach Pilsner that is offered exclusively at Hilton West Palm Beach and its dining outlets.
The omakase menu is currently $145 per guest and the curated beer pairing is $75 per guest. The restaurant is open Tuesday through Saturday, from 5 to 10 p.m. Advance reservations via the restaurant’s OpenTable page
