Palm Beach County is a growing culinary hot spot in South Florida. Here’s a look at what’s coming from some of the area’s top chefs and restaurants.
Rancher’s Reserve Meat Market (West Palm Beach)
Rancher’s Hospitality Partners Nicholas Scalisi and Chris Muneo are expected to soon open Rueshaw in West Palm Beach as Palm Beach County’s newest luxury steakhouse. The duo this summer also is adding another element – Rancher’s Reserve Meat Market – that will have approximately 1,500 square feet of retail space across from Rueshaw on North Dixie Highway.
Ranger’s Reserve Meat Market, Scalisi told me, will sell Rancher’s Reserve beef as well as prepared foods. It also will have a small kitchen for select menu items, a Wagyu Burger Food Truck.
“We want to create a ‘food corridor’ for the Rancher’s Reserve brand,’’ Scalisi said.
Rueshaw, by the way, was the name of one of the first two Akaushi bulls imported from Japan in 1976). The 4,000 square-foot restaurant that bears his name also will include a 1,200 speakeasy called “Fancy Bird.’’
All of the beef – for Rueshaw and the Meat Market – will be sourced from RHP’s two Florida ranches that now have a combined 150 head of Akaushi Wagyu cattle. The cattled is raised without the use of antibiotics and hormones
Scalisi and Muneio have been sourcing their Fern Street Wine Bar & Kitchen in downtown West Palm Beach with their Rancher’s Reserve Akaushi Wagyu beef for more than one year, and recently acquired another Florida ranch to raise certified Bershire pigs.
“We’re trying build the Rancher’s Reserve brand around high quality meat and emphasize healthy eating,’’ Scalisi said. “Things have really happened quicker than we expected – and the excitement is bigger than we thought.’’

Palm Beach-based restaurant team Ember Group next month is expanding its popular made-to-order sandwich and grab-and-go lunch spot, Buccan Sandwich Shop, to a second location in West Palm Beach, directly next to its celebrated Flamingo Park restaurant, Grato.
