Diplomat Prime has a well-deserved reputation for being one of South Florida’s top steakhouses, with executive chef Rashaad Abdool leading a fine-dining menu that features an assortment of dry-aged steak and seafood.

The Four-Diamond boutique eatery inside the Diplomat Beach Resort in Hollywood, FL., also is a winner of Wine Spectator’s 20222 “Award of Excellence” award for its list of more than 500 varietals.

Multi-course wine pairing dinners are popular events at Diplomat Prime – and ones in which Addool can show off his culinary skills.

“I know what I like,’’ when it comes to fine wine, said Abdool, who recently curated a six-course wine pairing dinner that featured Justin Wines. “But what I know a lot about is bourbon.’’

To that end, Abdool early next year is planning a dinner featuring a bone-in ribeye steak soaked in Whistle Pig bourbon and dry-aged for 45 days. Dry-aging, as most beef gourmands know, amplifies the flavor of a steak and increases its tenderness.

“I’ll figure out what bourbons will go with it,’’ said Abdool, a graduate of Le Cordon Bleu College of Culinary Arts. “I know I want to do a smoked dish, and then something with a dessert.’’

Led by 45-day Prime dry-aged New York Strip, Diplomat Prime’s menu currently features a total of 10 steaks, including two wagyu selections.

“The next menu change I’m bringing in higher end Kobe and will have flights: traditional filet, sake Kobe, ribeye wine Kobe and olive Kobe,’’ Abdool said.

“Our biggest challenge right now in getting steak is pricing. We don’t use regular ‘choice.’ Typically this time of year is when the market goes up. I have  a good relationship with my vendors I’ve been been working with some of them for almost 10 years and they have a good relationship with this restaurant – so they give us a really good prices.’’
